Hello fabulous friends!!!

I promised to give you my low-fat chicken taco recipe.  Yesterday I posted the recipe for the low-fat homemade tortillas.  Those tortillas make these chicken tacos A-Mazing!!!

So, here's the scoop.  Remember, I hate rules, take this and wiggle it all you like!

3 boneless skinless chicken breasts
3 Tbsp Lime juice
"some" chili powder (didn't bother to measure)

Put this in your crockpot on Low for several hours, until it is easily shredded.
You'll have some extra liquid (at least I did, no biggie)

1 can whole kernel corn - drained (or equal amount frozen corn)
1 can black beans - drained (I used some yummy jalapeno black beans, they weren't too spicy for the kidlet)
1 cup salsa
1 cup non-fat plain yogurt

Put these ingredients in with the shredded chicken, and let simmer on low until heated thoroughly.  I removed the lid and put the CrockPot on high to let it cook down a bit.
Put mixture on your homemade tortillas with fresh lettuce, tomato, onion and you're set for an easy, low fat, and yummy dinner!
 This is the taco mixture before I removed the lid and let it cook down a bit.  So yummy!
